Ali's Favorite Super Greens

Alainn’s Favourite Super Greens – serves 6-8

This can be prepared ahead of time and reheats well in microwave – it is a dinner party winner & can be added to ½ cup of quinoa, brown rice or risotto for a delicious vegetarian main dish.

Per portion: 80kcal, 8g carb


(all cut 2 inch long)

1 cup green beans

1 cup asparagus

1 cup sprouting broccoli (or broccoli florets)

1 cup sweet peas (frozen)

(all fresh and roughly chopped)

½ cup parsley

1 packet chives

½ cup mint

2 tbsp butter

1 tsp chopped or garlic paste

½ -1 tsp red pepper flakes

Preparation method

1. bring a pot of slightly salted water to the boil. Add green beans first and cook for 2 minutes, then broccoli and cook for another 2 minutes..then asparagus and peas and cook until water boils again..then drain

2. Rinse pot, return to heat and add butter, garlic and chili and sizzle for 30 seconds. Replace veggies and add all herbs and stir until everything is warm through and coated.
